Our food delivery drivers can’t wait to see some fiendish-fun on your menus this halloween! Here’s a robustly-flavourful roasted pumpkin hummus to start you off.
Ingredients
1 diced fresh pumpkin
5 tablespoons extra virgin olive oil
1 teaspoon ground cumin
1 head garlic (head chopped off to expose 1/4 of cloves)
400g can of chickpeas
3 tablespoons tahini
1 tablespoon pure maple syrup
juice of 1 lemon
handful of toasted pumpkin seeds or chopped, toasted salted peanuts
1/4 teaspoon ground cinnamon
Method
Heat oven to 200C/180C fan/gas 6
Toss the pumpkin together with 1 tablespoon of olive oil and the cumin together in a bowl
Place the pieces evenly onto a lined baking tray and add the head of garlic. Season and bake for 45 minutes until tender. The edges of the pumpkin and garlic should look a bit blackened
Tip the roasting tray (pumpkin and peeled garlic) and all the juices into a food processor. Add the maple syrup, lemon juice tahini, olive oil and a pinch of salt, then blend into a paste
Scoop out the hummus and serve drizzled with some olive oil, toasted pumpkin seeds/peanuts and a pinch of cinnamon
To make it even more spook-tacular, serve in the pumpkin skin!
